I made this amazing meal last night that consisted simply of vegetables. It is a great dish if you have left over veggies and don’t know how to get rid of them! It literally takes minutes to make too!
You can add in whatever vegetables you like and meat such as chicken or beef if you want to as well. Here is what I put in mine:
- 3 mushrooms
- half a pepper
- 4 stems of broccoli
- half a red onion
- half a courgette
- 2 handfuls of spinach
- salt + pepper
- olive oil
- Heat pan and add oil
- Put everything into the pan and fry until look cooked
You can also add some kind of dressing too whether thats with tomatoes or a creamy sauce would work well too!
Despite this only being vegetables, I find it can be rather filling which makes it perfect!
